Fava Bean Chickpea Salad

Ingredients
  

  • 1 can chickpeas
  • 1 can fava beans
  • 2 tomatoes chopped
  • 2 green onions chopped
  • 1/2 bunch parsley chopped
  • 2-3 garlic cloves minced
  • 1 lemon juiced
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions
 

  • Drain the chickpeas and fava beans using a colander and rinsing thoroughly under cold water.
  • Fill a medium-sized pot with water and bring it to a boil. Add the chickpeas and beans to the pot and cook for approximately 10-20 minutes or until they have reached the desired softness.
  • While the legumes are cooking, prepare the vegetables by chopping them into bite-sized pieces.
  • Once the chickpeas and fava beans are fully cooked, drain any excess water and combine them with the chopped vegetables in a mixing bowl.
  • Drizzle the salad with freshly squeezed lemon juice, high-quality olive oil, and season with salt and pepper to taste.
  • Serve the salad on its own or as a side dish with warm lavash bread for an authentic Middle Eastern dining experience.

Notes

If you’d like a substitute for fava beans because you are unable to find fava beans or simply prefer to use a different legume in this recipe, chickpeas on its own or even cannellini beans make great substitutes. Simply swap out the fava beans for an equal amount of your preferred legume and enjoy all the delicious flavors and benefits of this Middle Eastern-inspired salad.
