Freekeh with Chicken

Ingredients
  

  • 2 cups dry freekeh
  • 2 tbsp olive oil
  • 1 cup green peas
  • 1 half one whole rotisserie chicken cooked and shredded
  • 1 handful roasted almonds
  • salt and pepper to taste

Instructions
 

  • Rinse the freekeh well and remove any debris.
  • Heat 1 tablespoon of olive oil in a large pot.
  • Add the freekeh and allow it to cook for 1-2 minutes.
  • Season with salt and pepper.
  • Add 3 cups of water or broth.
  • Bring to a boil, cover, and simmer over low heat until the grains are tender and slightly chewy, around 30 minutes.
  • Fluff with a fork.
  • Add peas and chicken, and the remaining olive oil.
  • Allow to cook on low heat, covered, for about 10 minutes for the flavors to mesh together.
  • Top with roasted nuts.
  • Pair with yogurt and salad for the ultimate balanced meal.
