Ingredients
  

  • 1 mango large
  • 1 cup unsweetened almond milk
  • 1 cup nonfat Greek yogurt
  • 1 tbsp vanilla extract
  • 10 drops liquid monkfruit
  • 1/4 cup chia seeds

  • Begin by cutting the mango into sizeable pieces, keeping a small portion aside for the topping.
  • Place the mango pieces in a blender and blend until you achieve a smooth puree.
  • In a large bowl, combine the almond milk and yogurt, then whisk them together.
  • Add the vanilla extract, monk fruit, and chia seeds to the mixture. Continue whisking until the chia seeds are evenly coated.
  • Cover the bowl and refrigerate the mixture for at least 30 minutes.
  • Once the mixture reaches a pudding-like consistency, it's time to start layering.
  • Start by adding a layer of chia pudding, followed by a layer of mango puree, and continue alternating between the two until all the ingredients are used up.
  • Finally, garnish the top with diced mango before serving.
