Ingredients
  

  • 2 cup oats
  • 1/4 cup chia seeds
  • 1/2 cup sliced almonds
  • 2 scoops protein powder
  • 1 tbsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups unsweetened almond milk
  • 1 tbsp liquid monk fruit
  • 2 flax eggs*
  • 2 tbsp coconut oil
  • 2 tbsp vanilla extract
  • 2 cups frozen berries**

Instructions
 

  • Preheat the oven to 375°F
  • Grease a 9-inch square baking dish.
  • Stir together the oats, almonds, chia seeds, protein powder, cinnamon, baking soda, and salt directly in the baking dish.
  • Add the milk, flax eggs, monk fruit, and vanilla. Whisk until well combined.
  • Add the frozen berries and fold into the batter
  • Bake for 40 minutes.
  • Serve with a dollop of Greek yogurt and a drizzle of maple syrup.

Notes

*To make one flax egg, combine 1 tbsp flaxseed with 2.5 tbsp water; for this recipe you will need 2 tbsp flaxseeds + 5 tbsp water. Stir and let it sit for 5 minutes before adding it to the recipe.
**You can use fresh or frozen berries for this recipe
